I can never get enough of it. It's the first thing I look for in a restaurant and buffet tables in parties or local town fiestas. It has been in dessert menus of most restaurants because it is relatively easy to whip up yet tastes delicious. I remember my grandmother making it and even my mom, they were rich, creamy and just straight up heavenly. They'd cook a whole big batch and the whole dining table and kitchen counter tops would be covered in llaneras of flans waiting to be plated or shared with the next door neighbors. In my case, baking has always been a challenge since I loathe math and measuring anything, rendering the art of baking flans beyond me.</span></span></div>

<span style="font-size: small;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;"><br /></span></span><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Visiting a close cousin of mine a few months back introduced me to Kuriiing's Homemade Desserts' Leche Flan (and Coffee Jelly that tastes great too, but let's focus on the flans for now) that they had just ordered online. It was rich, creamy and tasted so good! It wasn't sickly sweet like other flans I have tasted, and there were lots of them, that you would need to wash it down with a couple of glasses of water or worse brush your teeth immediately after consuming. To top it all off, the flan wasn't really heavy, I could finish three full llaneras in one sitting and I'd still ask for seconds, but that's just me. Before leaving, I made sure I got the baker's online site, which is <a href="https://www.facebook.com/KuriiingsHomemadeDesserts">Kuriiing's Homemade Desserts FB Page</a>. I was planning to order after a couple of days, but things happened, like our grandfather's death which made indulging in tasty desserts not that much of a priority. Then I began blogging, which really left little time to think about anything else.</span></span></div>

I called my cousin about it and she told me that she hasn't tried them either, so we decided to order after a couple of days which I totally forgot about by the way! Until my cousin who just signed up for Instagram (for shopping purposes) called me up and told me to check my IG right away. When I logged in, I saw her post of 3 boxes of different flavored flans with the caption of "Pick Me Up" addressed to me. </span></span></div>

Sorry Couz, my brain isn't functioning that well, blame it on lack of sleep! When I finally managed to fully grasp the fact that I had 3 flans waiting for me, just a couple of blocks away, I was so ecstatic I went crazy! I don't quite remember what exactly I blurted out, many thank you's and a lot more words got jumbled in, in rapid succession mind you, but I think she understood. After ending the phone call, I asked Mr. D to pick up the yummy goodies that I couldn't wait to sink my fork into.</span></span></div>

It was just like the first time I tried their flan, these new flavors didn't disappoint, and even exceeded expectations. They were deliciously creamy and soft. It was our eldest's first time eating from an ice candy bag and needed an explaining on how to go about in doing that. The Little Hulk on the other hand just watched and perfectly copied what he saw we were doing right after his dad tore the end of his ice candy. He was a natural, or maybe he was just really hungry haha. The chocolate didn't disappoint us either, that flavor got devoured in record time and we were all very satisfied. He also made Guacamole just by adding fresh Avocados to his basic salsa, it was one of my favorite episodes. Anyway, since my mom was abroad most of the time, I had to take matters into my own hands and took on the role as the official Salsa maker of the family which was fun because I love knives and handling food. Over the years my mom's salsa recipe changed, mostly because my Dad couldn't get all of the ingredients and I had to make do with what I was given. I simplified it until it turned into what the Mexicans/Latins call "Pico De Gallo" which I found out after about more than a decade of making it, thanks to 30 Minute Meals by Rachel Ray.  </span></span></div>

<span style="font-size: small;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;"><br /></span></span><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">After extracting the juice from all of the calamansi in a big mixing bowl, pour in the amount of fish sauce based on how sour or salty you want it to be. Personally, I do equal parts of calamansi to fish sauce, but that's just me. Add the pepper and mix, then finely mince the onions and add it to the bowl. Make sure the onions are covered in the calamansi-patis mix for them to pickle. Pickling the raw onions will remove some of the bitterness and sharpness from them and make them easier for even our kids to enjoy. You can use this technique for salads as well.</span></span></div>

Make sure all of the ingredients are in uniform size when minced, that goes for the Green chilis and Cilantro as well. Mix all of them together, adjust with more salt or pepper if you want. Chill it first then serve as a side dish for meals or with chips while enjoying a movie at home with the family.</span></span></div>

Wait, there's Glinda the Good Witch from the musical Wicked, but the spelling is wrong so that doesn't count. Anyway, who knew that in July 2014, every Filipino in Luzon and Visayas, including myself, would forever be marked by that very name. The now famous name that would be linked to harsh winds that uprooted huge trees, caused tall posts to break and fall, destroyed houses and took lives. Oh and let's not forget to mention the massive power outages in Meralco areas that some as of yet are still being restored. </span></span></span><br /><br /><span style="font-size: small;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;"><span style="font-family: Georgia,"Times New Roman",serif;">In our particular area in Rizal, the howling winds on the Tuesday night Glenda entered PAR was our only warning before the power went out at 2 in the morning. Good thing Mr. D already bought 2 LED emergency lights and 2 small LED flash lights from Daiso, to help us get around in the dark. No more worrying about the dangers of candles and matches while there are kids running around the house, like causing a fire for instance. Those and the 2 old school fans we bought in the market really helped us survive the nights without electricity. It took a bit of elbow grease and teamwork on our part to get the Little Hulk and Little Miss Banshee to sleep, but me and Mr. D got the job done by taking turns fanning them. </span></span></span></div>

Mr. D and me on the other hand got some toned arms from all the hours of nonstop fanning.  </span></span></div>

We had water, food, gas, a roof over our head and each other, unlike some. Our mobile phones and other gadgets' batteries (they weren't fully charged in the first place) died aftter 24 hours of still not having power, good thing we had a landline phone as back up in case of emergency. We didn't dare go out, it was safer to stay indoors with the kids since the wind wasn't getting any weaker from what we could see outside the windows. We also heard that the flood waters in the center of our subdivision surpassed the height of the average Filipino, in other words we were stranded as usual until the water subsides. So anyway, the power was restored on Thursday at around 10AM while the kids were still sleeping, giving me the freedom to take action and charge everything that needed charging.</span><br /><br /><span style="font-family: Georgia,"Times New Roman",serif;">I booted up the Kindle to immediately check Meralco's official Facebook page for news updates on power restoration and instead got a warning of a rotational brownout scheduled for the day. We just got it back and they're taking it away again was my last thought before I turned off the tablet and let it charge some more. I broke the news gently to Mr. D and Miss Artsy, but I guess there was just no softening the blow of another brownout to a 9 year old who was looking forward to finally paint because there was sufficient light in her room again. We had an hour to bask in front of electric fans until they died and the lights went out, which wasn't enough time for the fridge to cool down. We were forced to cook all of the fish, poultry and meat in the freezer before they stink and go bad. Fish & Veggie soup and Chicken & Pork Adobo was the easy way out and we took that route, under the circumstances who could blame us. </span></span></span></div>

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Electricity finally returned after 7 hours and lasted through the night, which gave us much needed rest from all the fanning we did. The next day some parts of Luzon experienced rotational brownouts again, which lasted for 4 hours in our area between noon and dinner time. After the incident it has now been part of my routine to check Meralco updates for scheduled power interruptions a couple of times a day since they started implementing that before the typhoon hit.</span></span></div>
