Blend them all together. Make sure to taste it and adjust to your desired level of sweetness and intensity of vanilla or chocolate flavor. </span></span></div>

The same goes with the other flavor, just substitute the mangoes for the cocoa powder. When they're all in the bags, freeze them and that's it. In a couple of hours you'll have chocolate and mango fudge ice candies or as we call it "Fudgecicles."</span></span></div>

They were deliciously creamy and soft. It was our eldest's first time eating from an ice candy bag and needed an explaining on how to go about in doing that. The Little Hulk on the other hand just watched and perfectly copied what he saw we were doing right after his dad tore the end of his ice candy. He was a natural, or maybe he was just really hungry haha. The chocolate didn't disappoint us either, that flavor got devoured in record time and we were all very satisfied. My mom would make it for us, whenever she was home for a vacation, with fresh ingredients bought from the local market, and we'd enjoy it with any fried or barbequed food plus a lot of white rice. I think she got the recipe from one of her foreign friends and had freshly squeezed orange juice as one of the key ingredients.</span></span></div>

He also made Guacamole just by adding fresh Avocados to his basic salsa, it was one of my favorite episodes. Anyway, since my mom was abroad most of the time, I had to take matters into my own hands and took on the role as the official Salsa maker of the family which was fun because I love knives and handling food. Over the years my mom's salsa recipe changed, mostly because my Dad couldn't get all of the ingredients and I had to make do with what I was given. I simplified it until it turned into what the Mexicans/Latins call "Pico De Gallo" which I found out after about more than a decade of making it, thanks to 30 Minute Meals by Rachel Ray.  </span></span></div>

Personally, I do equal parts of calamansi to fish sauce, but that's just me. Add the pepper and mix, then finely mince the onions and add it to the bowl. Make sure the onions are covered in the calamansi-patis mix for them to pickle. Pickling the raw onions will remove some of the bitterness and sharpness from them and make them easier for even our kids to enjoy. You can use this technique for salads as well.</span></span></div>

Make sure all of the ingredients are in uniform size when minced, that goes for the Green chilis and Cilantro as well. Mix all of them together, adjust with more salt or pepper if you want. Chill it first then serve as a side dish for meals or with chips while enjoying a movie at home with the family.</span></span></div>

<span style="font-size: small;"><span style="font-family: "Helvetica Neue",Arial,Helvetica,sans-serif;"><br /></span></span><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">If you frequent your local wet market as much as my husband does, then I'll bet you know about "Dulong" (our local fish vendors call it that) or whitebait. The word whitebait does not refer to a single species of fish, it is actually a general term used in many countries to describe small freshwater fish that are tender and edible.  Here is the lowdown of our own fritter recipe using whitebait inspired by <a href="http://www.marketmanila.com/archives/fried-tawilis-a-la-marketman" target="_blank">Market Manila</a>'s tortang dulong article, thanks Marketman!</span></span></div>

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Fortunately, Dulong is available everytime Mr. D goes to the market at the fish stall he always frequents, where he found the rare Tawilis we discussed in one of my earlier articles. So when he got back, we immediately tackled the small freshwater fish by rinsing them gently in salted water to remove dirt and putting them in a strainer to remove excess moisture.</span></span></div>

<br /><span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">While that's going on, prepare the other ingredients for the batter. Mince a couple of tomatoes, onions, and spring onions, again no measurements (I hate measuring, that's why I leave the baking to Mr. D, it's more of a Science than cooking anyway), just add as much as you want. Mix them with the drained fish fry, add salt and freshly cracked black pepper to taste, flour and beaten eggs plus herbs and spices of your choice. We added celery seed, turmeric powder and a bunch of coriander greens.</span></span></div>

Keep the size of your fritters uniform by using one ladel in scooping your batter. Fry your whitebait fritters for about 5 minutes on each side or until golden brown and crispy. Drain on paper towels to remove excess oil. Serve immediately with your choice of vinegar, lemon wedges,  or in our case we chose my Pico De Gallo again haha!</span></span></div>

A staple in Tagaytay/Taal local restaurants, the crispy fried Sardinella Tawilis is always a hit to their patrons which is why cooking it at home was our solution to getting our Tawilis fix (when available) without going to Batangas. Here is a step by step recipe inspired by <a href="http://www.marketmanila.com/archives/fried-tawilis-a-la-marketman" target="_blank">Market Manila</a>, thanks Marketman!</span></span><br />

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">A landlubber being married to a certified island boy from Cebu certainly has its charms, having a great seafood shopper and cook is one of them. He's always on the look out for fresh quality fish available in our nearest local wet market, and one day, last Saturday to be exact, he hit the jackpot. Scored some fresh Tawilis from a fish vendor's stall he always frequents! Took home the beauties and got them prepped up for cooking.</span></span><br />

<span style="font-family: Georgia,"Times New Roman",serif;"><span style="font-size: small;">Cleaning each individual sardine was indeed a bit time consuming but I was enjoying myself nonetheless since I'm one of those who actually love the experience of getting down and dirty with food. Give me a kilo of fresh anchovies and I'll be happy to behead, debone, gutt and fillet them with ease for my Mom's Kilawin recipe anytime. Handling sardines is a cinch compared to small anchovies, it was easy. You just need a really sharp pairing knife to make incisions along the belly of each fish and remove the guts. Rinse with cool salted water or brine, then drain to remove as much moisture as you can.  </span></span><br />

While that's heating up prepare the flour mixture, I just added freshly cracked black pepper, turmeric and celery seed powder to regular plain white flour. Didn't even measure anything, just eyeballed it. Mix them really well, and dredge your fish in it, a couple at a time since we're going to fry in batches. Add oil to your pan, just enough to coat the amount of fish per batch, make sure the oil comes up to temperature before putting in the fish or you'll end up with a soggy-greasy mess instead of the crispy goodness we're after. Fry the sardines for just a few minutes on each side until golden brown and crunchy crispy, it takes about 3-5 minutes tops. Transfer the cooked tawilis on paper towels to drain off excess oil and sprinkle with sea salt. Serve immediately with heeps of rice (the Filipino way, of course) and your favorite side dish, in our case we chose my Pico De Gallo.</span></span><br />

Well, let's just say it was a very quiet meal, we were all too absorbed in devouring the contents of our respective plates and eyeing the serving platter of delicious sardines to utter a word to each other except for "Please pass the Tawilis" maybe. Haha! </span></span><br />
