Being a fan of <a href="http://www.imdb.com/title/tt0765425/" rel="nofollow">Top Chef</a> since the first season aired in February 2006 has definitely expanded my knowledge on food and broadened my culinary skills & palate. So when Kale started to get recognition back in 2010, I was up to date on that particular trend in the making, which really took off by 2012. Yes, I knew about Kale Chips even before it popped up everywhere in the states (it was almost cliche) and became famous over the internet. 
 
But what is Kale exacty? Known as the "Queen of Greens," <a href="http://en.wikipedia.org/wiki/Kale" rel="nofollow">Kale</a> or borecole is a member of the cabbage family that comes in two forms. There is Kale, which has smooth leaves and then Curly Kale, which is the most common of the two and as the name suggests has crinkly leaves. It is a vegetable that has green or purple leaves sometimes tinged with blue that grow in a loose rosette at the top of the stem instead of forming a head like most cabbages do.</div>

Kale is available in 3 different varieties:

<li>Curly — ruffled leaves and deep green hue </li>
<li>Ornamental — green, white, or purple leaves with a more subdued flavor than curly’s pungent one </li>
<li>Dinosaur aka Tuscan kale — the one, I am most familiar with, has dark blue-green leaves with an “embossed texture”; its taste has been described as “slightly sweeter and more delicate . . . than curly kale.</li>

I remember Tuscan Kale being cooked together with chicken in one of my favorite episodes of Top Chef Season 3 by CJ and Trey on the frozen pasta dinners elimination challenge, it was the winning dish by the way. I also remember <a href="http://en.wikipedia.org/wiki/Rocco_DiSpirito" rel="nofollow">Rocco Dispirito</a> dissecting their bag of frozen food, finding frozen kale in it and saying it was his favorite. In Top Chef Season 4, Nikki and Jen presented a very rustic dish with handmade tortellini and Cavolo Nero or Black Cabbage, which is another name for Tuscan Kale, for the movie night elimination challenge.</div>

Kale can be eaten raw, dehydrated, baked, sauteed, braised, juiced or added into smoothies, take your pick. Make Kale chips for a healthier snack alternative the whole family can enjoy or make a green smoothie which I highly recommend. Kale freezes well, it actually tastes better and more flavorful after being frozen and thawed out, so keep that in mind when you get some.

Browsing through my Facebook news feeds is usually for checking out the latest on health, parenting, current events around the globe and updates on my friends for about 20 minutes and then moving on to other things. The other day's routine check however, made me pause for a bit on a specific article concerning a favorite hollywood actor comedian of mine, <a href="http://www.imdb.com/name/nm0000245/">Robin Williams</a>. He was found dead at his home in California, at the age of 63 and it looks like he took his own life, which brought about this post.</div>
<div style="text-align: justify;">
 Who doesn't know the man who won Best Supporting Actor in <a href="http://www.imdb.com/title/tt0119217/?ref_=nm_knf_t1">Goodwill Hunting</a> and was voted "Funniest Man Alive" by Entertainment Weekly in 1997? His God-given talent of making people laugh so hard they pee their pants was a very welcome gift he shared with millions.</div>

 He touched our hearts by bringing to life characters such as the loveable Genie, Patch Adams, Jack, Sean Maguire, Popeye our Spinach eating hero, Mork, John Keating, the Peter Pan who grew up in Hook, the hilarious Dr. Kosevich in Nine Months, Alan Parrish in Jumanji, and Professor Philip Brainard who made Flubber, to name a few. He has proven his dramatic acting skills throughout his career but is mostly known for his wild comic talent involving a great deal of improvising on his part. And when I say a great deal of improvisations, it means just that. Did you know that during the course of recording the voice of Genie in Aladdin, he improvised so much they had almost 16 hours of material? And that he also ad-libbed so many of his lines in the movie that the script was turned down for a Best Adapted Screenplay Academy Award nomination? Well, that's how it went.</div>

Comedy bars (of the present) are one of those things that scare the wits out of me. From what I have seen from Youtube and heard from my friends who frequent them, I can confidently say that I will never grace one with my presence. Now if it was Robin Williams taking the stage, that would be a different matter altogether. I would be first in line for sure. In my opinion, he was one of the best comedians who have ever lived. Did you know he was frequently called up by <a href="http://www.imdb.com/name/nm0000229/">Steven Spielberg</a> when he was filming the <a href="http://www.imdb.com/title/tt0108052/?ref_=nm_knf_t2">Schindler's List</a> in 1993 and was put on speaker phone, so he could tell jokes to the cast and crew to cheer them up using his Genie in Aladdin character most of the time? He was something special alright!</div>
<div style="text-align: justify;">
 For the longest time, during my younger years, I only knew him as <a href="http://www.imdb.com/title/tt0107614/">Mrs. Doubtfire</a> in the movie. For me, it was the one movie that really left its mark on me, with the unique plot (at the time) and his funny over the top antics. It was the only Robin Williams movie that I watched with my family as a child which made it all the more special to me. I remember laughing the whole time I was watching it, with my parents and both siblings one night. It's definitely a classic in my book, a comedy that you can watch repeatedly but still laugh at the same jokes and scenes as if it's always the first time. When he died, he took with him the laughs that I know so well and love so much.</div>

 This is just like <a href="http://www.imdb.com/name/nm1006879/">Dolphy</a> all over again, another legend exits the stage of comedy, and the lights turn off. Thank you for the laughs Robin!</div>

Don't you just hate it when chair legs become uneven and the chair wobbles? Well, wobbly chairs annoy me, and having one around the house constantly bugs me. While a repeatedly folded piece of think paper might be a temporary solution, I still wanted to look for an easy yet more permanent fix that won't cost me much.</div>
<div style="text-align: justify;">
 Fortunately, I came across a simple fix for my chair problem on Pinterest, using a wine cork.</div>
<div style="text-align: justify;">
 Here's what I needed:</div>
<ul style="text-align: justify;">
<li>A wine cork</li>
<li>A sharp knife to cut smoothly through the cork</li>
<li>A cutting board</li>
<li>Really strong glue (Mighty Bond)</li>
</ul>

The process is really easy. All you have to do to is cut a disk from the cork that’s the appropriate length to even out the chair legs. What I did was put the cork down on the ground right next to the leg and placed the knife right under the leg. With my knife, I put a small knick in the cork at the correct height to serve as my marker. Then, I cut the cork slightly above the mark I made, and the height was perfect. I applied just enough amount of glue to the disk and attached it to the end of the chair leg, let it dry and it's done. No more wobbles.</div>

I'd suggest not using the stained end of the cork since it may mark your floors. Otherwise, corks are soft and won't scratch the floor, so they're a great, cheap solution to uneven chair legs.</div>

For a few years now, Mr. D and I have been known for our health advocacies, part of which is encouraging people to read food labels, to know exactly what is in the "food" they're buying. Grocery shopping has truly been a challenge for us, mostly since it's really hard to find products that do not contain toxic chemicals, preservatives and artificial flavors & coloring. Making everything from scratch definitely is the best route to take, but I have to admit that a little help doesn't hurt either, especially when it comes to making a huge batch of marinara sauce for our favorite pasta dinners.</div>

 A year ago, we decided to forgo having our usual weekly tomato-based pasta meals when the tomato sauce brand we used, to our shock, changed some of their ingredients, it was not so healthy anymore. Having a school grader and an active toddler to take care of, and being heavily pregnant at that, just made making marinara sauce from scratch not an option. Fortunately, Mr/ D discovered <a href="http://claraole.com/products/tomato-sauce/tomato-sauce">Clara Ole Tomato Sauce</a> while doing the grocery shopping, it's All-Natural and has NO Preservatives. So here's my simple and healthy marinara sauce recipe that our whole family enjoys on a weekly basis:</div>

 1/2 kg Ground Pork 
1/2 kg Lean Ground Pork 
1 kg Clara Ole Tomato Sauce 
3 Medium Red Onions diced 
5 Stalks of Celery chopped 
2 Medium Carrots diced 
3 Ripe Tomatoes diced 
1 clove of Garlic finely minced 
Italian Basil 
Oregano 
Rosemary 
Thyme 
Butter 
Muscovado Sugar 
Sea Salt 
Freshly Cracked Black Pepper

 Heat your pot to a medium-high heat and add just enough amount of butter to coat your <a href="http://en.wikipedia.org/wiki/Mirepoix_%28cuisine%29">Mirepoix</a>, which is also known as the <a href="http://en.wikipedia.org/wiki/Holy_trinity_%28cuisine%29">Holy Trinity</a> in Louisiana, or Soffritto in Spain just minus the garlic. It's a mixture of onions, celery and carrots that is usually used as the base for a lot of sauces, soups and broths. Saute the mirepoix and let the diced up vegetables sweat out for a bit to release the juices, season with just enough herbs, salt and pepper. </div>

Add all the pork and make sure to season it well with salt, pepper, sugar and all the herbs. Once the pork is cooked half way, add the diced tomatoes and garlic. After around 10 minutes, add the Clara Ole Tomato Sauce and a bit of water to thin it out a bit. Cover your pot and let it boil. When it comes to a boil put the heat on low, adjust the seasoning as you desire and let it simmer for 5 minutes before turning off the stove. And that's it.</div>

 I have been blogging for just a couple of months now (actually started last year, with a couple of articles but didn't really push through with it until now) and was surprised to be nominated for a Liebster Blog Award by Lauren Suggs of <a href="http://twintestedpinapproved.wordpress.com/">Twin Tested, Pin Approved</a>. Thanks a lot Lauren! I gladly accept the award! Wow, my first ever blog award! This is just awesome! I really appreciate the nomination and the opportunity to write this post and meet fellow bloggers. </div>

To start with, I didn't know anything about the award so I decided to ask my friend, Google, to help me out on this one. As it turns out, the blog award has German origins, the word “Liebster” has several definitions: kindest, nicest, beloved, dearest, sweetest, lovely, kind, pleasant, valued, cute, endearing, welcome, sweetheart and boyfriend. All the nominees are already winners once they accept the award and pay it forward. It's basically a blogger to blogger award that works like a chain letter that could be considered good or bad which entirely depends on the person receiving it. In my case, I think it's an awesome way to meet other bloggers and discover & support new blogs as well!</div>
